We are no strangers to Mexican cuisine in this house. In fact, it’s one of our favorite meals–and one that we eat at least weekly. Tacos are always on repeat, but fajitas, enchiladas, Mexican casserole and nachos are also a few of our favorites.
It’s true that nothing goes better with a Mexican dish than margaritas, or a cold beer is a close second. Just stating the facts y’all! I love all the margaritas, but the classic on the rocks is typically my go-to.
Since my husband has been out of town, I decided to have a mini “seista for one” on Cinco De Mayo. I whipped up my little party of one a delicious Pink Lemonade Margarita and BBQ Chicken Nachos. They were both so good that I had to share the super easy recipes with you!
Pink Lemonade Margarita
Ingredients: (makes one drink)
- 1 1/2 ounce Tequila (more or less to your taste-I likem’ strong)
- 1 ounce Cointreau or Triple Sec
- 1 cup Pink Lemonade (I used Country Time, Simply makes a really good pink lemonade!)
- 1/2 of a Lime, juiced
- Optional: Salt for rim
Directions: Mix all ingredients in a cocktail shaker. Shake, shake, shake. Serve over ice. Garnish with lemon/lime. Enjoy!
BBQ Chicken Nachos
Nachos are the best because they can be as plain or as loaded as you like! The possibilities are endless. I used what I had on hand, but swear I never make these the same way twice. And every time they are delicious!
Ingredients: (without specific measurements–just add toppings to your liking)
- Tortilla chips
- Shredded Cheddar Cheese
- Shredded Chicken (I used leftover rotisserie)
- BBQ Sauce
- Black Beans
- Diced Roma Tomato
- Diced Avocado
- Diced Green Onion
- Sour Cream
- Salsa
Directions: Preheat oven or toaster oven to 350. For easy clean up, lay a piece of foil over a baking sheet. Spray lightly with cooking spray. Spread a layer of tortilla chips. Mix chicken with BBQ sauce. Layer chicken, black beans, and cheese over chips. Repeat layer. Bake for 10-15 minutes. Slide nachos onto a platter and top with tomato, avocado, green onion. Serve with sour cream and salsa. Devour.
Again, this recipe is super versatile. Switch out the chicken for beef, the BBQ for buffalo sauce, cheddar cheese for pepper-jack, add jalapenos, olives, red onion, banana peppers, or even chili. Whatever your nacho loving self is jonesin’ for!
