It’s true. They really are magical. 😉 And not just for breakfast. In this house, pancakes are a universal food so any time of day is just fine by us! And I will say, making these “Magical Rainbow Pancakes” just took our pancake game to a whole. ‘notha. level.
I’ve always wanted to make rainbow pancakes for my girls, but just haven’t put forth the “effort” to actually do it. Honestly, that effort was minimal because lemme tell you, these were easy breezy to whip up!

Here’s how you can make your own Magical Rainbow Pancakes…
First, I started with a box of (just add water) pancake mix. You can use whatever you like whether from scratch or + protein, etc. I mixed up enough batter for 12 total pancakes (making 6 colors, 2 of each).

Next, I got out 6 smaller bowls and portioned my batter into each. Then I added 1-2 drops of gel food coloring (I like these) and gently mixed a little more.

PRO TIP:: 1/ don’t overmix your batter, it gets tough. 2/ for a fluffier pancake, let your batter sit for up to 20 minutes before cooking.
Lastly, get out your pan or griddle (I prefer griddle because it cooks more at one time), slather up with some butta, and let those pretty little things bubble until ready to flip.

Top with mo’ butta + syrup, a little whip cream and of course SPRINKLES. Duhhh, don’t ya know I have two little girls that live for sprinkles?!


Today is St. Patty’s Day, but these would be fun any time of year…Spring/Summertime, rainy days, the first day of school. Seriously, who doesn’t love a rainbow?
