If you are looking for a last minute dessert to bring to your Easter brunch or dinner, look no further…I’ve got you covered with three tried and true and delicious options!
Now, while all of these are relatively easy, one out of the three does take a little more time and effort, BUT the end result will be worth it. That said, I’ll just kick it off with that recipe!
The Best Sugar Cookies Ever. (recipe via Jenny’s Cookies)
I do believe they live up to the name “best ever”. I won’t list this recipe in detail, but if you have the time and want to whip these up, definitely visit Jenny’s site. The cookie was the perfect amount of sugary softness and the buttercream frosting complements the cookie beautifully. I purchased her book “Eat More Dessert” last summer and have tried a few of her other recipes–all which have been delish. And she’s always sharing some cookie inspo on Instagram, which is partly what lead me to finally making these cookies!
Being a newbie, I definitely realized I need to practice my buttercream piping skills, but I don’t think I did half bad for a first timer. My husband even said, “wow, they look professional”…thanks babe! I hope Jenny would be proud too! I also need to have more than one tip if I’m going to do multiple colors again–that alone would’ve saved me some time. But still…I’m happy with the result and look forward to eating several of these over the weekend. Diet plan what?
Next up….White Chocolate Dipped Oreos.
If you know me personally then you know I have a deep love for Oreos. They are my favorite store bought cookie through and through. My favorite homemade cookie is chocolate chip. You know, just in case someone wants to ever bake me cookies for no reason. 😉
Oreos are pretty versatile and can be used in lots of different desserts. Ones that I’ll be sure to share in future blog posts, I’m sure. This one in particular is super simple, it’s literally 3 ingredients and 3 steps.
White Chocolate Dipped Oreos
Ingredients:
- Oreos (any kind you want–I like the O-G’s)
- White Chocolate Candy Melts (or whatever kind/color you want!)
- Sprinkles (I used these cute nonpareil pastels for Easter, but jimmies or quins would be cute too)
Steps: Melt the chocolate per the instructions on the bag. Dip Oreo in chocolate. (I only did one side, but you could totally go all in–I wouldn’t be made at you!) Sprinkle, sprinkle, sprinkle! Stick in the fridge to harden.
And try to keep them away from the little hands that want to devour them all. She cute though! 😉
Last but not least….the dessert I’m bringing to Easter dinner at my Mom and Stepdad’s house along with a big plate of cookies….No-Bake Banana Cream Pudding. I did mini’s of this today so I could surprise my hubby with dessert, but will be using a trifle bowl or other casserole dish on Sunday. He was a fan and even asked if I was trying to butter him up for something, haha. 😉
No-Bake Banana Cream Pudding
Ingredients:
- Banana Cream Instant Pudding Mix (large box)
- 3 Cups Milk
- Nilla Wafers
- 1-2 Sliced Bananas
- Cool Whip
Steps:
- Prepare pudding per instructions on package, let chill.
- Start layering in preferred bowl.
- Nilla Wafers
- Pudding
- Banana slices
- Cool Whip
- Repeat steps.
- Top with a few wafers, banana slices and crushed wafers.
- Keep refrigerated until serving.
- Enjoy!
This is another recipe that you can change up easily. Maybe use chocolate, vanilla, or lemon pudding in place of the banana. Then maybe use an Oreo in place of the Nilla Wafer with strawberry instead of banana? Oh heck yes! The possibilities are endless my friends.
The mason jars are kind of awesome for keeping individual portions. I might need to have these stocked in the fridge on a regular! 😉
Being as it’s only a day until Easter, you may not have time to try any of these right now, unless you are last minute on everything like me? Ha! So if you can’t enjoy now, remember that none of these recipes are for Easter only use! And I mean seriously, do we really even need a holiday just to have dessert?!
